Flavorful Green Vegetables
Your choice of fresh green vegetable:
-Broccoli florets, green beans, snow peas, sugar snap peas, or asparagus
1 or 2 tablespoons butter
2 or 3 green onions, chopped
Garlic salt (if desired)
dash of lemon juice (if desired)
In a medium saucepot, melt butter and lightly sautee the white portion of your green onions. Add the rest of vegetables, salt and pepper, and a few tablespoons to 1/4 cup of water. Toss to coat vegetables, cover, and simer on low for a few minutes. Vegetables should be bright, but not quite tender. Remove lid and turn up heat a little, add lemon if desired, and simmer away water until vegetables are tender-crisp. If vegetables are very soft and beginning to darken, they are overdone.
Serve as a side to any dish.
* * * My son Ozric always called these the "Green beans with the flavor". They still won't eat broccoli, usually, but they like asparagus too. Make sure you do not overcook your vegetables, they begin to lose their fresh flavor, and soft mushy brown veggies are a bit unappetizing. Fresh-frozen veggie may be used in a pinch. You only want enough water in the bottom of pan to steam the vegetables, and it should cook down to almost nothing, just enough of a light sauce to coat them. If too much liquid is present when the vegetables are done, use a slotted spoon to serve to avoid a puddle on your plate.
