1 lb. potatos, peeled and cut up
1 onion, diced
1 1/2 to 2 cups finely chopped ham (optional)
2 quart water
1 Tablespoon salt
1/4 cup butter
1/2 cup milk or sour cream
1 - 1 1/2 cups shredded cheese (optional)
Combine potatoes, onion, and ham in kettle with water. Cover and cook on low heat about 2 hours, stirring occasionally to prevent sticking. Season with salt and pepper. Mash potatoes with potato masher to desired consistency and add butter, milk, and cheese. Reheat and add more seasoning if necessary, but do not boil again. Serve topped with chives.
Makes 2 quarts or 6 servings.
