Southwest Chicken

Boneless, skinless chicken tenders, or breasts cut into strips
cooking oil or bacon fat
Chili powder
Cumin
Black pepper
Garlic Salt
1 can diced tomatoes or salsa
1 can whole-kernal corn (with juice)
1 can black beans, rinsed
1 cup uncooked rice


Heat oil or fat in a large, deep skillet. Add chicken, season as chicken is browning. Once chicken is cooked, add tomatoes, corn and beans. Bring back to a simmer, and add rice. Mix rice into liquid, cover, and reduce heat. Simmer until rice is done, adding more water if necessary and stirring occasionally to prevent sticking.
Once rice is done, you may remove lid, turn heat back up and sautee rice if desired, for a better color and flavor.
