Meatloaf

1 lb. each ground beef and ground pork, or beef and Italian sausage
3/4 cup seasoned bread crumbs
2 eggs
Salt (season salt or garlic salt is good too)
Pepper
1/2 cup onion, chopped
1 tablespoon or less olive oil


In a skillet, lightly sautee onions with a little olive oil, until onions begin to soften. Set aside to cool.
In a large bowl, use your hands to mix together raw meat, eggs, bread crumbs, salt, pepper, and the cooled onions. Form meat mixture into a loaf shape in a casserole dish large enough to have at least an inch of open space around all sides. You may want to form two loaves for speedier and more thorough cooking. Cover with foil and bake at 350F for about an hour, until juices run clear and center is no longer pink.

This is my basic meatloaf recipe. Use any of the following sauces and added ingredients.


Meatloaf - Mushroom Sauce

Meatloaf recipe
1 cup mushrooms, sliced

1 can cream of mushroom soup (condensed or semi-condensed)
1/4 cup milk


Prepare meatloaf as above, but add 3/4 cup of mushrooms to the onions.

While meat is cooking, mix together sauce by combining mushroom soup, milk, and remaining mushrooms. Drain excess grease from the meat dish, and cover with sauce. Return to oven, uncovered, for about 15-20 minutes.

Serve with mashed potatoes, a green or orange vegetable, and bread.

Meatloaf - Italian Tomato Sauce

Meatloaf recipe
1 cup mushrooms, sliced
1/2 cup grated Parmesan cheese

1 16oz. can Tomato sauce
Diced tomatoes (if desired)
Italian herbs


Prepare meatloaf as above, but add 3/4 cup of mushrooms to the onions, and reduce the bread crumbs by 1/4 cup in favor of the parmesan cheese.

While meat is cooking, mix together sauce by combining tomato sauce, tomatoes, herbs, and remaining mushrooms. Drain excess grease from the meat dish, and cover with sauce. Return to oven, uncovered, for about 15-20 minutes.

Serve with mashed potatoes, a green vegetable or salad, and bread.

Meatloaf - Mexican Salsa

Meatloaf recipe

1 1/2 cups salsa (I use Pace or Old El Paso medium chunky salsa or piquante)


Prepare meatloaf as above.
Drain excess grease from the meat dish, and cover with salsa. Return to oven, uncovered, for about 10-15 minutes.
Serve with mashed potatoes or rice, a salad, and bread.

Meatloaf - BBQ Sauce

Meatloaf recipe

1 8oz. can tomato sauce
1/2 to 1 cup any flavor BBQ sauce


Prepare meatloaf as above.
While meat is cooking, mix sauces together. Drain excess grease from the meat dish, and cover with sauce. Return to oven, uncovered, for about 10-15 minutes.

Serve with mashed potatoes; a green, yellow or orange vegetable or salad; and bread.
