1 lb. large shrimp, peeled and deveined
Juice of lemon, lime, orange, or pineapple
2 to 4 garlic cloves, pressed
Marinate shrimp in the juice for a few minutes. Melt a tablespoon or two of butter in a skillet, add shrimp, garlic, and seasonings. Sautee until shrimp is cooked through.
Serve with any pasta, rice, couscous, and/or vegetables.
* * * A very simple and quick meal. Shrimp only takes a few minutes to cook, and will turn rubbery if overdone. We find this is best with seasoned wild rice, or couscous, and a green vegetable such as fresh-steamed green beans, broccoli or asparagus. Also good tossed with pasta.
