Banana Nut Bread

1/2 cup oil
1 cup sugar
2 eggs, beaten
3 ripe bananas, mashed
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
3 Tablespoons milk
1/2 teaspoon vanilla
1/2 cup chopped nuts

Beat oil and sugar together. Add egg and banana pulp and beat well. Add sifted dry ingredients, milk and vanilla. Mix well and stir in nuts. Pour into greased and floured 9 x 5 x 3 inch loaf pan. Bake at 350 for 1 hour, or until a toothpick inserted in center comes out clean. Store overnight before cutting and keep wrapped in foil.

* * * I typically have to bake this for a bit longer than specified. I have had good results doubling this recipe, and dividing between three loaf pans. Two being the size listed, and the third a bit smaller. This is a good, dense cake rather than a light fluffy one, and lends itself well to being spread with soft butter or cream cheese.
